What raspberry is
Raspberry is a sweet-tart red fruit note with a jam-like depth. The fruit gives no oil that a perfumer can use, so the note is rebuilt from aroma molecules; raspberry ketone is the best known of them. It makes a floral or woody composition read as juicier and brighter, and it turns up most often at the top of a pyramid.
